Crunchy Schnitzel Club Sandwich

Ingredients

  • 2 slices Abbott’s Bakery® Smooth Oat (fresh)
  • 1 Home-made chicken schnitzel – Chicken breast, crumbed
  • 1 Slice of Bacon
  • 1 Egg
  • 1 Slice of Swiss Cheese
  • 2 Slices of Tomato
  • 2 Slices of White onion
  • 1 tbs Whole Egg mayonnaise, mixed in with seeded mustard
  • 4 slices of Green coral lettuce

Method

  1. Cook the chicken schnitzel according to your preferred method until golden and crispy.
  2. Fry bacon in a pan until it reaches your desired level of crispiness. Set aside on a paper towel to drain excess fat.
  3. In the same pan, fry the egg sunny-side up, or as you prefer.
  4. Spread the whole egg mayonnaise mixed with seeded mustard on one side of each slice of Smooth Oat.
  5. Place half of the lettuce on one slice of the bread.
  6. Layer the bacon strips over the chicken schnitzel.
  7. Place the fried egg on top of the bacon.
  8. Add a slice of cheese over the egg.
  9. Arrange the tomato and onion slices on top of the cheese.
  10. Add the chicken schnitzel.
  11. Place a few more leaves of lettuce on top of the chicken.
  12. Top with the second slice of bread, mayonnaise side down.
  13. Cut the sandwich in half if desired and serve.
